I switched to Xfinity internet in October 2020, and got an XB7-T modem. When I initially set it up, I noticed my phone was getting WiFi 6, which was great. Eventually (I forget when exactly) I got curious and was exploring the xFi settings. I think I changed something in the radio settings, and I lost WiFi 6, it’s now WiFi 5 at best.

This doesn't have to affect the channel that was selected in the GUI. My APs (Uqibuiti) operate in this way when DFS channels are selected. Of course, the XB7 may have different logic in automatic channel selection, but this is very much an XB7 specific hardware/software question, not an AC/AX question. Xfinity has hijacked the manual configuration options for both 2.4 and 5ghz channels and there is no indication xfinity is going to let end users change any settings for channels or bandwidth options for either radio. It "connects" as 160.254.192.59 which is a self assigning IP meaning the DHCP from the XB7 failed to assign an IP to the printer. I tried changing the DHCP Lease range to 192.168.0.2-192.168.0.253.
